Gatte Ki Sabji is a traditional Rajasthani dish made with gram flour (besan) dumplings simmered in a spicy and flavorful yogurt-based gravy.

To prepare Gatte Ki Sabji, a dough is made using gram flour, spices such as cumin, coriander, turmeric, chili powder, and salt, and a small amount of water. The dough is kneaded until smooth and then shaped into cylindrical dumplings called "gatte." These dumplings are then boiled until cooked through.

Meanwhile, a yogurt-based gravy is prepared by whisking together yogurt with spices like cumin, coriander, turmeric, and red chili powder. This mixture is then cooked with a tempering of oil or ghee, cumin seeds, asafoetida (hing), and sometimes fenugreek seeds until the yogurt thickens slightly and the raw flavor dissipates.

Once the gravy is ready, the cooked gatte dumplings are added to it and simmered until they absorb the flavors of the gravy and become tender. The dish is often garnished with fresh cilantro leaves and served hot with rice or roti (Indian flatbread).
