Sukhadi, also known as Golpapdi or Gur Papdi, is a traditional Indian sweet made primarily from wheat flour, jaggery (unrefined cane sugar), and ghee (clarified butter). It's a simple yet delicious treat that is enjoyed across India, especially during festivals and special occasions.
To make Sukhadi, wheat flour is roasted in ghee until it turns golden brown and aromatic. Then, jaggery is melted in a separate pan until it forms a syrup-like consistency. The roasted wheat flour is then mixed with the melted jaggery and stirred continuously over low heat until it thickens and starts to come together.
Once the mixture reaches a thick and sticky consistency, it is transferred to a greased tray or plate and pressed down firmly to flatten it into a thick slab. While still warm, the slab is cut into square or diamond-shaped pieces, creating individual servings of Sukhadi.
Sukhadi is loved for its rich caramel-like flavor and melt-in-your-mouth texture. It's often garnished with chopped nuts such as almonds or pistachios for added flavor and texture.
