Mixed dal, also known as mixed lentil curry, is a flavorful Indian dish made by combining a variety of lentils (dals) together in a spiced gravy. It's a wholesome and nutritious dish that's enjoyed across India.
To prepare mixed dal, a variety of lentils such as yellow lentils (moong dal), split chickpeas (chana dal), red lentils (masoor dal), and pigeon peas (toor dal) are washed and soaked for some time. Then, they are cooked together with water, salt, and turmeric powder until they become soft and creamy.
In a separate pan, a tempering (tadka) is prepared by heating oil or ghee and adding spices like cumin seeds, mustard seeds, dried red chilies, and curry leaves. Once the spices splutter and become aromatic, chopped onions, garlic, ginger, and green chilies are added and sautéed until golden brown. Tomatoes can also be added for extra flavor.
The cooked lentils are then added to the tempering along with additional spices such as coriander powder, cumin powder, red chili powder, and garam masala. The mixture is simmered for a few minutes until the flavors meld together and the desired consistency is achieved.
