Tilpapdi, also known as Til Chikki or Sesame Brittle, is a traditional Indian sweet delicacy made primarily from sesame seeds (til) and jaggery (unrefined cane sugar). It's a crunchy and nutty treat enjoyed especially during festivals like Makar Sankranti and Lohri.
To make Tilpapdi, sesame seeds are dry roasted until they turn golden brown and release their aroma. Then, jaggery is melted in a pan until it forms a syrup-like consistency. The roasted sesame seeds are mixed into the melted jaggery, and the mixture is quickly spread onto a greased surface or a flat tray.
While still warm, the mixture is flattened and pressed down firmly to form a thin, even layer. Once it cools down and solidifies, it is cut into square or diamond-shaped pieces, creating individual servings of Tilpapdi.
