Khajur Gundar Paak is a traditional sweet delicacy from Rajasthan, India, made primarily with khajur (dates) and gundar (edible gum or gum arabic). This sweet is popular during festivals and special occasions in Rajasthan, cherished for its rich flavor and nutritional value.

To prepare Khajur Gundar Paak, dates are soaked in water to soften them, and then they are mashed into a paste after removing the seeds. Meanwhile, gundar is fried in ghee (clarified butter) until it puffs up and becomes crispy.

In a separate pan, ghee is heated, and the mashed dates are added along with sugar or jaggery for sweetness. The mixture is cooked on low heat, stirring continuously, until it thickens and starts to leave the sides of the pan. The fried gundar is then added to the mixture and mixed well.

Once the mixture reaches a thick and sticky consistency, it is poured onto a greased plate or tray and allowed to cool. After it sets, it is cut into squares or diamond shapes.
