Kala Tal Nu Kachariyu is a traditional Gujarati sweet dish made during winter, especially during the festival of Makar Sankranti. It's essentially a sweet made from black sesame seeds (kala til), jaggery (gud), and ghee (clarified butter), along with other optional ingredients like desiccated coconut, nuts, and spices.

To prepare Kala Tal Nu Kachariyu, black sesame seeds are dry roasted until they release their nutty aroma and turn slightly golden brown. Then, they are ground into a coarse powder. In a separate pan, jaggery is melted with ghee to form a thick syrup. The ground sesame seeds are added to this syrup along with other optional ingredients like desiccated coconut and nuts. The mixture is stirred continuously until it thickens and starts to leave the sides of the pan.

Once the mixture reaches a fudge-like consistency, it is spread evenly onto a greased plate or tray and allowed to cool. After it sets, it is cut into squares or diamond shapes.
