"Gund Giri Ke Ladu" is a traditional Indian sweet delicacy made from edible gum resin, known as "gond" or "gund." These round-shaped sweet balls are popular in Indian households, especially during winter months or after childbirth as they are believed to have warming and nourishing properties.

To prepare Gund Giri Ke Ladu, edible gum resin (gond) is first fried in ghee (clarified butter) until it puffs up and becomes crispy. It is then set aside. In a separate pan, ghee is heated, and whole wheat flour (atta) is roasted until golden brown, emitting a nutty aroma.

Once the flour is roasted, the fried gond is added to the pan along with chopped nuts like almonds, cashews, and pistachios, as well as dried fruits like raisins and chopped dates. The mixture is then sweetened with sugar or jaggery (unrefined cane sugar) and flavored with cardamom powder and sometimes nutmeg or saffron for added aroma.

Once the mixture comes together, it is shaped into small round balls or ladus while still warm. The Gund Giri Ke Ladu is allowed to cool and set before serving.
