Kathol, also known as Kathiyawadi mix, is a popular dish from the Kathiawar region of Gujarat, India. It's a hearty and flavorful mixed lentil curry typically made with a variety of lentils like tuvar dal (pigeon pea), moong dal (mung bean), chana dal (split chickpea), urad dal (black gram), and sometimes with kidney beans or black-eyed peas.
To prepare Kathol, the lentils are soaked, cooked until tender, and then simmered with a blend of spices such as cumin, coriander, turmeric, and chili powder. It's often garnished with fresh cilantro and served hot with rice or Indian bread like roti or puri.
