Haldi ki Sabji" is a traditional Rajasthani dish that features fresh turmeric root as the main ingredient. Known for its earthy flavor and vibrant color, this dish is often prepared in Jodhpur and other parts of Rajasthan, especially during the winter months when fresh turmeric is abundant.
To prepare Haldi ki Sabji (Jodhpuri style), fresh turmeric roots are peeled and finely chopped or grated. In a pan, ghee (clarified butter) or oil is heated, and spices such as cumin seeds, mustard seeds, and asafoetida (hing) are added to temper the oil.
Once the spices release their aroma, chopped onions and green chilies are sautéed until golden brown. Then, the chopped turmeric is added to the pan along with spices like turmeric powder, coriander powder, red chili powder, and salt.
The mixture is cooked until the turmeric is tender and cooked through.
